Y’all, this week has been so full. We don’t normally leave the house every day but this has been one of those weeks.
Braydon had a dermatology appointment for his eczema Monday. More about that at a later time. 18 month shots Tuesday and oven shopping Wednesday. Back to buy it today and go to BJ’s to stock up on the bulk stuff.
We have been without an oven for almost a month now. It’s been a a long month too. I was heating up some garlic bread one night and heard this loud buzz. I couldn’t figure out what it was until I went to pull the bread out of the oven and bam! Still frozen. We’ve been dealing with our home warranty company trying to get it fixed for a month now and finally got a call that the parts would be delayed another 2 weeks so they offered us a buyout. Woohoo! New oven! It’s crazy what gets me excited as an adult now.
I am so glad that I’m a gadget person because that’s the only way I’ve been feeding my family. I didn’t even use my oven that much before but not having one has forced me to use other methods. It’s forced inspired me to try out new recipes, too, because who wants to eat spaghetti every night? I keep forgetting to take pictures of what I’ve made but I’ve stumbled upon some really good recipes on Pinterest! So far we’ve done hamburger stroganoff (a favorite in our house), chili, pork roast, chicken and dumplings, steaks and some sort of Italian pork chops. We normally do our steaks on the grill but decided to try the air fryer that night. Oh my! They were so good and tender! I won’t lie…I was intimidated by the air fryer at first. I had no clue what I was doing! Do I add oil? Am I going to burn things? I don’t even know how to fry things in a regular fryer so I really had no clue what I was doing.
This thing is SO EASY! I started out with some sweet potato fries then tried frozen chicken nuggets, grilled cheese (so good!) and French toast. I’m going to attempt some canned biscuits this week because we love breakfast for dinner and I can’t go without biscuits. Maybe I can remember to take pictures of them!
What’s your favorite ovenless recipe? We have a crock pot, instant pot, air fryer and the stove is still working too. I’m trying to add some new things to our meals and just feel so stuck sometimes!
